So how would you clean a knife while out in the woods?  Away from the kitchen sink or something rather...

The good old way : stab the earth and use your pants to finish cleaning, one pass each side. If you want to go the extra mile, you can still rince with water from your bottle (before pants use).

Mostly I just wipe it down with my bandana or shemagh.

depends on what it was used for.
If having gutted or cleaned an animal... then stab into the ground... then either wipe, then wipe, then coat in whatever fuel/chemical that I have with me...
if just dirty, just wipe on whatever.
