Exactly what material is this guy using, it looks like bailing twine but the bailing twine Im finding doesnt look right when I try using it.

To me it looks like the cheapest and nastiest baler twine you can get ...... But ....... He is doing a powerful back twist on the strands as he braids them in.
This gives a different result to simply braiding.

I'm trying a twist like this, and it seems like the hardest part is keeping the twist in all the strands as you go. But watching this, it seems like he only keeps the twist in the crossing strand. Am I overthinking this and doing too much?

Correct. You only need to twist the strand as it's being added to the braid. This is shown very well in AA's Balearic sling video when he starts adding material. All the fibers are loose until it's time to braid the specific strand.
