some time ago I posted my method for making biltong.
If I wasn't so short of time (and lazy) I'd find and post the thread here.
It was in a discussion of non-perishable food to take into the wilderness.
I've recently done some longevity trials with venison biltong.
Alright I made it and just left it lying around my room.
Instead of growing mouldy all that's happened is that it's dried out to the extent that it now snaps rather than bends. Hasn't gone off, mouldy or anything like that. I must have had it for over 4 weeks now, still tastes great.
I did cut the strips a bit narrower than usual to facilitate the drying process.

So yep thin totally dried biltong will last for long periods of time with no other preservation method needed - just keep it dry and cool. Perfect wilderness fodder :-)
