Rat Man
|
My grandparents on Mom's side were from Lithuania. Vinus's post reminds me of two dishes Mom learned from Grandmom. I'll spell them as best I can.. the first are Bellinis, which are sort of thick pancakes made of shredded potatoes and onions, deep fried, served with salt and sour cream on top. Next are Klatskis. These are big boiled dumplings with a meat mixture inside that tastes like Kielbasa. They are very filling. There are some legendary eaters in my family. One Klatski should satisfy a normal human completely. It takes a real man to eat three. Grandmom died when I was sixteen and Mom passed not quite two years ago. Bellinis aren't that hard to make. With some trial and error I could probably get them right. Klatskis on the other hand are tricky. Though they're boiled they're supposed to be flaky on the inside or they're way too heavy. It's hard to get them down exactly right. I probably won't get to eat Klatskis again. Klatskis and Bellinis are real comfort food.
