Arrow nocks or bow nocks?  I'm not sure about bone nocks for bows, although bone was used to reinforce the siyahs on central Asian bows.
Bone nocks for arrows can be done just like regular footed shafts.  Just drill a hole and insert the nock, or carve a fitting.  Mostly they are totally unnecessary.  Wooden nocks tend to be just fine, especially if the arrow is of a good hard wood, like ash, hickory, and so on.  Even willow arrows will have self nocks strong enough to take the string from a 80 pound bow.
