I've got a piece of Arkansas novaculite for sharpening my knives as well.  It's quite a common stone for knife sharpening.  But I find the nicest part of the sharpening kit to use is the strop.  Makes such a nice noise.
My hands are probably as cut up as yours.  I've done all the stupid things - carving when tired, carving when cold, carving when there is no light to see by, carving without securing the piece properly.  I learnt quite quickly that these are not good things to do.  I'm now quite proficient at knife wielding, but my hands look like a patchwork quilt because of my early days.

the hands do suffer, i find that carving towardsd myself is easyer to control and in my opinion safer for me .
once i was carving towards myself in the dark with a frost on the ground and didnt cut myself it was about 2 in the morning at the marshes trying to get a fire going there was ice on the water and it was starting to rain but i got the fire going with my flint and steel (isnt it great when the snot and sweat muix and drops of your nose

I won't say never carve towards yourself, but it is quite stupid.  How do you manage to get any power in there, any confidence, any nice strokes?  Nah, carving away from yourself makes much more sense.

That's how you'd use a hook knife.  I personally find that carving towards yourself inhibits accuracy and everything, and I can't make any decent carvings (of animals, say) using it that way.  But if it works for you, then do that by all means.  Bushcraft as a whole is all about finding the most efficient way - if it's efficient for you, then great.

Knives, knives, knives! I could talk about 'em all night.

I carry a Spyderco Endura at ALL frikkin' times and a Leatherman at work. I deliver the death blow to boars with an Ontario Spec-Plus Survival and skin&butcher with a Schrade Scrimshaw w/ a 5 in. blade.
I fence with Del tin rapiers and side swords and I absolutely fantasize about fencing with an Angus Trim longsword. (Is that wierd?  Undecided )

I own a lot of knives most are cheap and nasty though. I usually like to buy really cheap but sturdy blunt knives you get off of markets and then sharpen then myself, i have some really good knifes from that.
My best knive i found in an armoury in France on holiday, there was literally hundreds of knives but for some reason i liked it best. Its a Laguiole, proper french knife make and razor sharp, although it looks great its a little big for a folding knife so i dont always carry it around with me.
Ill try and post up a pic for you guys.

Ahh, I haven't been on the forum in forever.  It's good to get back to talking about knives and weapons and the good stuff in life... Grin
About cutting towards yourself, this is generally a bad idea, but it can be useful when carving.  For example, many professional carvers take the knife in their four fingers and use their thumb on the piece of wood to pull their hand slowly towards themselves as they cut.  If done properly, this gives you a lot of control.
